LOOKING FOR RECIPE!

Does anyone have a good recipe for Cream of Broccoli Soup? I'm looking for a recipe that doesn't have velveeta cheese in the ingredients. I like velveeta, but it's just a little too cheesy for me, so I'd rather use cheddar cheese or even use no cheese at all. If any of you bloggers out there, have a recipe you'd like to share, I would really appreciate it. :o)

  1. DJ- I have an AWESOME recipe for Broccoli cheese soup with chedder cheese. It is oh so yummy. I had my Mom, Mary Grogan and Michelle Hillard over one night to make it, and they LOVED it too! Here it is, I hope you love it! (ps- it doesn't call for much cheese, I always put extra b/c I love tillamook cheddar cheese, but you could even opt to put none in and it would still taste good, and very healthy.

    PSS- there were clouds covering the moon when I got home so no pics. :(

    Broccoli Cheese soup:

    Ingredients:
    2 tsp. Olive Oil
    4 Med. sized leaks (use only white and light green parts).
    4 garlic cloves.
    3 1/2 cups of milk.
    1 14 1/2 oz. can of chicken broth.
    6 cups of fresh or frozen broccoli.
    1 medium potatoe (peeled and diced).
    t Tbsp. flour.
    1/2 cup grated cheddar cheese.

    -In lrg. saucepan heat oil over med. heat; add leaks and cook, stirring frequently until lightly browned.
    -Add garlic and cook until fragrant.
    -Add 1 1/2 cups of milk, chicken broth, broccoli and potatoe. bring to a boil, reduce heat to low and simmer, partially covered until veggies are tender (about 20 min.)
    -working in batches, transfer soup to a blender or food processor and puree until smooth. Return to pot.
    -In a small bowl combine flour and 1/4 cup of milk. Stir until well blended and whisk into soup. Add remaining 1 and 3/4 cup of milk. Bring to a simmer over medium heat, whisking. Remove from heat and add cheese and stir until melted (I use grated cheddar and usually put in about 2 -3 cups extra- I told you I LOVE CHEESE!) :)
    -Season with salt and pepper.

    Enjoy, hope you love it as much as I do. If you have never used leaks before they are soooooo good, they look like a LARGE green onion and they add so much yummy flavor.

  2. Michelle, thank you for the recipe, it's sounds really good! I've never cooked with leeks, do they taste anything like an onion?

  3. They are very similar to an onion. Infact you could substitue them with an onion but I highly suggest using the leak, it has a GREAT flavor for this recipe.
